The Brief

ZBurg is a new food truck and central kitchen in Bangalore, launching a burger-led menu under first-time F&B founders. Weeks out from opening, they brought me in to do what most new operators skip: an outside, structured look at the operation before the doors open, not after something goes wrong.

The Audit

I ran a full on-site review covering setup, prep workflow, food safety, pricing, and food quality — a 68-point checklist built to catch what’s easy to miss when you’re inside your own launch. Alongside it: a straight supplier comparison across key ingredients, a look at the prep and cold-storage workflow against their actual service hours, and a ranked risk register going into launch.

What It Found

Nothing dramatic, which is the point. A supplier switch worth roughly 10% on one core ingredient, with no change to quality. A cold-storage process that read correctly on paper but wouldn’t have held up once it met Bangalore’s ambient heat — the kind of gap that only shows up when someone checks it against the real environment, not a template. A handful of other items now handled before launch instead of during it.

The Takeaway

Most first-time F&B operators get the food right and the systems wrong — not because they don’t care, but because you can’t audit your own blind spots. Standard operating procedures aren’t universal: something that works as a food-safety process in one city’s climate can quietly fail in another’s. The fix isn’t more effort, it’s an outside check before you open, not after a customer notices first.
